Friday Favorites

Once a Month Cooking (also known as, whenever Anna and I can coordinate our schedules to make time to cook!)

Anna and I have been cooking freezer meals off and on for over two years now (can you believe it's been that long, Anna?). Thankfully our families have similar tastes and we have wonderful husbands who appreciate the food enough to wrangle the four girls while we cook. This past Saturday we met for another round of cooking and I'll admit that there were times when I wondered if it was worth it. I was EXHAUSTED when I got home Saturday night. My feet hurt, my back hurt, and I was just plain worn out. BUT, when yesterday rolled around and I was making out a menu for the week, I remembered again that the long day was definitely worth it.

Here's a peak at what we made on Saturday. Each of us walked (or, limped ;-)) away with:

Side dishes:
1) Honey Ginger Carrots (2 recipes)
2) Twice Baked Potatoes (approx. 10 whole potatoes...19 halves? could be made into a main dish with some chili or shredded chicken on top)

Breakfast:
1) Sausage Breakfast Muffins (24 muffins)

Entrees:
1) Vegetarian Chili (4 meals)
2) Ham and Macaroni Casserole (probably 2 meals)
3) Chicken Pockets (enough for dinner and lunch the next day)
4) Chicken and Yellow Rice
5) Sausage and Rice Casserole (may be enough for 2 meals)
6) Chicken Spaghetti (may be enough for 2 meals)
7) Poppyseed Chicken (we had this last night and there was enough left over for a couple of lunches)

So, since we eat at church on Wednesday nights, this basically means NO cooking during the week and thus no excuses to eat out for the next month. Yep, it was definitely worth it!

Are you referring to the Poppyseed Chicken that we had at your grandmother's house during college on one of our ensemble trips? I am going to need that recipe, please. :o)

It's not the same recipe. This one's a little different. I'll have to get you all three that I have and let you see which one you like best. :-) This one is the easiest, but I don't think it's my favorite.
