Tip Tuesday - Quick Fruit Cobbler

This is one of my favorite dessert recipes from the More-with-Less cookbook. Since you can use fresh, frozen, or canned fruit, it can be made anytime of year, but it's especially perfect for summertime when there is lots of fresh fruit available. Top it with some vanilla ice cream and you've got an easy dessert that's sure to please!

Quick Fruit Cobbler

Preheat oven to 350.

Combine in bowl:
1/2 cup sugar
1/2 cup flour
1/2 cup milk
1 teaspoon baking powder
1/4 teaspoon salt

Pour into 9x9" greased baking pan.

Add:
2 cups fruit - fresh, frozen, or canned

Bake for 40 minutes. The crust starts out on the bottom, but fills in around the fruit and on top - yum!

The recipe says that it serves 6, but the last time I made it, 4 of us put it away quite nicely! I also used soymilk instead of regular milk last time and it worked just fine.
