Meals in the freezer - HUZZAH!

This might not be a "huzzah" worthy event for you, but it is for me...especially since we'll be heading into the finals zone here at our house soon and I don't want my daughter to eat Chick-fil-A three times a week. Anna and I have been trying to get back to stocking our freezer ever since her AMAZING new kitchen was finished, but sickness, travel, etc. kept getting in the way (don't you just hate when life happens? :-)). BUT, we finally blocked out some time to do a mini-session tonight - well, last night now, I guess - and we were quite productive if I do say so myself.

And, tonight I think we set a record for ourselves that's going to be tough to beat next time. We finished in less than 5 hours (and that included most of the clean up). More importantly, we finished before the wee hours of the morning. We bought a new once a month cooking book that has a helpful organizing system that seemed to work. I'm sure we'll keep getting better, but we were both pretty proud of how it worked tonight. And since inquiring minds always want to know, here's what we cooked:

Side dishes:
1) Honey Ginger Carrots
2) Garlic Smashed Red Potatoes (maybe enough for 2 meals for the McEggs)

1) Spaghetti Sauce (2 meals)
2) Parmesan Crusted Tilapia (2 meals)
3) Teriyaki Chicken
4) Teriyaki Burgers
5) Chicken Broccoli Fettuccine
6) Pepper Steak

Phew. Not bad for a Friday night! Plus, we had tons of fun as always. Anna is amazing and it's so nice to have some time where we can just talk without being interrupted by our adorable children every 5 minutes (even if we do get interrupted by boiling alfredo sauce!). Tonight there was even time for a couple of rants by me. Anna was, of course, amused. And, I, of course, apologized for ranting because, well, those of you who read this know that I can't help it. Fun times.

Thanks to you (and a few others I have secretly stalked over the past year), I was inspired to start back.

I really hope I can discipline myself to keep it up.

OH! What Cady said about taking a deuce had me rolling. I seriously was wiping tears.

Thanks for the book suggestions.
I adored the Poisonwood Bible and The Red Tent. They are actually two of my favorites.

I haven't read Eat, Pray, Love either. I better get on it though, because I kind of want to see the movie. I never see a movie before reading the book.

I will definitely try out Mennonite in a Little Black Dress. The title in of itself brings a smile to my face.
