I've posted this recipe before, but it remains one of my most favorite dessert recipes. It's my go-to for a quick, easy, and delicious summer dessert. It's from the More-with-Less cookbook (published by the Mennonite Central Committee). I've even been known to make it with frozen or canned fruit when I didn't have fresh on hand and it was still yummy. So, enjoy!
Quick Fruit Cobbler
Preheat oven to 350.
Combine in bowl:
1/2 cup sugar
1/2 cup flour
1/2 cup milk
1 teaspoon baking powder
1/4 teaspoon salt
Pour into 9x9" greased baking pan.
Add:
2 cups fruit - fresh, frozen, or canned
Bake for 40 minutes. The crust starts out on the bottom, but fills in around the fruit and on top - yum!
The recipe says that it serves 6, but I usually figure more along the lines of 4 adults per recipe because I think one can never have enough cobbler. Don't forget the ice cream!
